Sparkling Vermentino 2019
THE VINTAGE
Vintage 2019 ended up having extremely high-quality fruit but below-average yields, a
season that started out dry and stayed that way with below-average rainfall. The vintage
tackled everything from lack of rainfall, frost, windy conditions at flowering caused issues
and a hailstorm just put the season on a back foot. An early-season start to pick ensured
most fruit ripened quicker due to smaller crops.

THE WINE
Only on selected vintages do Michael and Susan immerse themselves in the process of
creating the Pied de Cuvee solution and hand tiraging on site their Méthode
Traditionnelle Vermentino.
After 24 months this is then sent off to be professionally disgorged left with no dosage to
maintain the freshness of Vermentino with a creaminess of mouthfeel and sparkling wine
that screams summer enjoyment with seafood and hot weather.
TERROIR
Rich red brown loam
AGEING
The initial base wine is wild fermented, natural malo full malolactic, second fermentation
introduction of Pied de Cuvee solution to re-activate the fermentation to create bubbles.
Maturation on yeast lees in bottle for 24 months before final disgorgement off-site.

TASTING NOTES
Notes of lemon verbena and fresh lemon custard on the nose.
Beautiful acidity on the palate with a zingy creamy mouse texture.
This wine would perfectly pair with sunshine, freshly shucked oysters and caviar.
