A Sparkling Farewell — and a Family Moment

 — A Decade-Long Journey in Every Bottle

There are certain places that live in the corners of our imagination.
For me, one of them is a quiet beach in Sardinia — where the air smells of the sea, a gentle breeze rolls across the sand, and a few sardines sizzle on the fire. It’s a scene made complete with a glass of chilled sparkling Vermentino in hand.

Closer to home, I’m pulled back to childhood memories: the beach a short drive away, fish and chips wrapped in paper, toes buried in the cool Yorke Peninsula sand, and a can of Coke clutched in salty fingers. These days, I imagine that same scene — but with a bottle of sparkling Vermentino, the sun setting on another warm Australian day, and the sound of the tide keeping rhythm.

These moments are what we try to capture in a bottle: not just flavour but a feeling.

The Journey

Our Vermentino story began in 2011. We didn’t have all the answers — just a curiosity and a sense that this Mediterranean grape belonged here. It spoke of summer, sea air, and shared tables. Over the next eleven years, it became part of who we were, poured on lawns shaded by umbrellas, paired with anchovies and sardines, and shared with friends far from the coast but never far from joy.

Alongside the still wines, we embarked on a sparkling adventure — four vintages of Méthode Traditionnelle: 2011, 2013, 2017, and 2019. The first vintage was a cool year, giving us a pristine base wine. We experimented with different disgorgement times, shared both with our customers, and were met with smiles and glasses raised. It became clear: the true star was Vermentino itself.

The Craft

Méthode Traditionnelle sparkling is slow, attentive work — preparing the pied de cuvée solution, feeding yeast daily like a cherished sourdough starter, hand tiraging each bottle on site and letting the second fermentation quietly unfold in glass. It’s the kind of winemaking that asks for patience and rewards you with magic.

2019 was our final tirage for sparkling Vermentino, as our focus turned fully toward Roussanne. Just 36 magnumswere laid down — not as a grand finale, but as a quiet, meaningful pause.

A Family Thread

Over the years, the sparkling process became something more than work. Each vintage, our son Campbell would help feed the yeast — hands sticky with sugar, a grin of quiet pride. It seems only fitting that this final release carries his name.

As well as our daughter Peyton’s name will grace the 2025 Rosé. (released soon) These wines have grown up alongside our children, and this feels like the perfect moment to honour that connection.

The Vineyard & The Wine

Sourced from Jill and Jim Mader at Light Pass, this vineyard holds one of the earliest plantings of Vermentino in the Barossa (2006), own-rooted H62 Rolle clone. The fruit was hand-picked, cold-soaked overnight, basket pressed, naturally fermented, and aged for 15 months in seasoned French oak. At 12.9% alc, the wine was hand tiraged on site and disgorged off site with care.

The result is something rare and luminous — a sparkling Vermentino that speaks of place, patience, and people.

The Release

Just 36 magnums of the Limited Edition Méthode Traditionnelle Campbell’s Sparkling Vermentino 2019 will be released. This is a wine for celebrations, shared tables, seafood feasts, and unhurried afternoons.
