Hand-picked, cooled prior to crushing, crushed then left on skins in cool room for 12 – 24hrs before basket pressing.Free run and pressings kept separate and put to French oak puncheons.Battonaged fortnightly and allowed naturally to go through malolactic fermentation.Remained unfiltered to go to bottling and kept lees in finished wine.Appearance like cloudy apple juice, aromas of pineapple core, slight yeastiness and tutti Frutti aromas.An elegant wine with good acidity drive of a sweet n sour sherbet to the end with fullness on palate.
