The Wine

Deeply coloured red/purple with vivid, concentrated varietal aromas of blackberry, blackcurrant and cassis, the 2009 Yelland & Papps Devote is the epitome of rich, bold, Barossan Cabernet Sauvignon. There are hints of kirsch, black-strap licorice, clove, rosemary, oregano, forest floor, freshly-cut fennel bulb, and dark chocolate with lighter wafts of spicy oak, black peppercorn and eucalyptus.

Well weighted on the palate with an impressive, defined fruit entry of rich, concentrated blackberry, cassis and blackcurrant fruits sheathed in deep spice. Hints of Dutch-licorice, fresh herbs, bramble, kirsch, black peppercorn, pastis, dark chocolate and subtle oak mesh on the palate, with lighter hints of earth, mint and roasting meats. Concentrated and rich, the wine shows great freshness with bright acidity and ripe tannins keeping everything in check through to a lingering, spice and black-fruit soaked finish. Perfect for the next lamb roast.

 

Drink now or cellar for 8-10 years.

The Winemaking

Fermented on skins in an open fermenter for 7 days and then gently basket pressed, this small parcel of wine was then transferred to new(20%) and old(80%) French Hogs heads for 20 months of maturing.

Once matured the wine was bottled unfiltered and then spent 6 months in bottle in our warehouse maturing prior to release.
