The Wine

“God made Cabernet Sauvignon, whereas the Devil made Pinot Noir”… so said André Tchelistcheff, the legendary figure of American winemaking. Old André also said “ Appreciating old wine is like making love to a very old lady. It is possible. It can even be enjoyable. But it requires a bit of imagination”…. we like the cut of his jib.

None of the herbaceous, capsicum notes of the cooler regions here; Barossa Cabernet Sauvignon is all about voluptuous black fruits, texture and bang for your buck while remaining true to the integrity of its variety. It tends to over deliver in both fruit intensity and enjoyment and that is just the way we like it.
The nose here is redolent of blackberry and blackcurrants along with macerated cherries, plum and creme de cassis. The ripe, opulent fruit is underscored by hints of deep baking spice, black licorice, earth, fruit-cake, violets, dark chocolate and wafts of subdued French oak.

Medium-bodied in the mouth, the 2015 vintage in the Barossa bestowed on us a lovely, elegant fruit weight and fine, ripe sandy tannins that gently tug at the palate providing support and structure. Again, it’s all about black fruits - blackberry, plum and cherry with some lighter mulberry high-tones further in the background. With plenty of spice, a suggestion of tobacco and purple flowers and the gentlest seasoning of French oak, it is a wine that provides oodles of drinking enjoyment with a savoury edge that will provide a winner in the food/wine marching stakes. Something meaty and robust would be just perfect.

The Winemaking

Cabernet Sauvignon was picked and destemmed on 27th of February, and pressed off 18 days later on the 17th of March.
100% seasoned French Oak for  15 months, then bottled unfined  and unfiltered.
